Canned chickpeas are already cooked, so it's perfectly safe to eat them straight out of the can.
No, you don't need to peel the chickpeas before using them. Some hummus recipes recommend peeling the chickpeas for creamier hummus, but for other recipes, you can leave them as-is.
If you decide to use dried chickpeas instead of canned chickpeas, there are a couple different ways you can make them. The easiest method is in the Instant Pot, since there's no soaking required. If you don't have an Instant Pot, soak the chickpeas in water overnight, then cook them on the stovetop in boiling water for 1.5 to 2 hours until they reach the desired level of tenderness.
If you don't use all the chickpeas from a can, you can store the leftovers in an airtight container in the fridge for up to a week.
