- 1/2 lb chicken breasts diced, see notes
- 1/2 cup BBQ sauce
- 1/2 cup pizza sauce or just use 1 cup BBQ sauce total
- 3 cups shredded cheddar cheese
- 1/2 red pepper sliced
- 1/2 red onion sliced
- 1/2 cup corn
- 2 tbsp fresh chopped cilantro
Instructions
- Preheat oven to 425 F. Heat a bit of olive oil in a medium-sized skillet over medium-high heat. Add chicken, seasoning with salt and pepper and cooking for 5 minutes until cooked through. Remove from heat and toss chicken in 1-2 tbsp of BBQ sauce and set aside.
