Easy BBQ Chicken Flatbread
This easy BBQ chicken flatbread is a quick 20-minute dinner loaded with flavor and protein. It's the perfect way to use up leftover chicken, too!

- 2 store bought flatbreads see notes
- 1/2 lb chicken breasts diced, see notes
- 1/2 cup BBQ sauce
- 1/2 cup pizza sauce or just use 1 cup BBQ sauce total
- 3 cups shredded cheddar cheese
- 1/2 red pepper sliced
- 1/2 red onion sliced
- 1/2 cup corn
- 2 tbsp fresh chopped cilantro
Preheat oven to 425 F. Heat a bit of olive oil in a medium-sized skillet over medium-high heat. Add chicken, seasoning with salt and pepper and cooking for 5 minutes until cooked through. Remove from heat and toss chicken in 1-2 tbsp of BBQ sauce and set aside.
Mix BBQ and pizza sauce together, then spread onto flatbreads. Divide cheese, chicken, red pepper, red onion and corn.
Bake in the oven for 10-15 minutes until cheese is melted and crust is crispy. Remove from oven, garnish with cilantro, then cut up into pieces. Serve and enjoy!
Mini naan or pitas will also work as a base.
You can also use rotisserie or leftover chicken in place of fresh chicken.
Lightly oil the flatbread edges for extra golden, crispy crust.
Slice veggies thinly so they soften nicely in the oven.
Don’t overload with sauce to avoid a soggy base.
