This easy Microwave Omelette is perfect for meal prep! Make it ahead of time with your favourite toppings for a quick and healthy breakfast.
Ingredients and substitutions
- Cooking spray – use any cooking spray of your choice to coat the mason jars.
- Mixed veggies – onions, peppers, mushrooms, zucchini, spinach and tomatoes would all be delicious.
- Kielbasa – use ham or another protein option like breakfast sausage or bacon.
- Cheddar cheese – or another cheese of your choice like mozzarella or Swiss.
- Eggs – you could also use egg whites, but the omelettes won't need to cook for as long.
- Salt & pepper – to taste.
How to make an omelette in the microwave
Step 1: Sauté the veggies.
Season the veggies with salt and pepper, and sauté until softened.
Step 2: Spray the mason jars with cooking spray.
Step 3: Add ingredients to the mason jars.
Divide the veggies, ham and cheese evenly amongst the jars. Add a pinch of salt and pepper, and crack two eggs into each jar.
Step 4: Microwave or store for later.
If you're eating right away, mix up with a fork, then microwave for 2 minutes. Otherwise, store in the fridge for 2 days with the eggs or for 5 days without the eggs.
Variations of this recipe
You can customize your mason jar omelette to make it your own! Here are some different variations of this recipe:
- Eggs: Instead of whole eggs, you can try using egg whites. Keep in mind the cooking time won't be as long (likely about 1 minute 30 seconds instead of 2 minutes), so you'll need to keep an eye on the microwave.
- Veggies: Add in any veggies of your choice like onions, peppers, mushrooms, zucchini, spinach, tomatoes, sundried tomatoes, asparagus and more.
- Protein: Mix things up with the protein by adding in some cooked diced breakfast sausage, bacon crumbles or even leftover chicken or turkey.
- Side Dishes: You can enjoy your meal prep omelette on its own or serve it with a healthy smoothie, overnight oats or baked oatmeal cups.

Equipment
- 4 16 oz mason jars
Ingredients
- Cooking spray
- 2 cups mixed veggies I like diced up onions, peppers, mushrooms and zucchini
- 1 cup ham or kielbasa diced
- 1/2 cup cheddar cheese grated
- 8 eggs
- Salt & pepper to taste
Instructions
- Saute veggies with a bit of olive oil or cooking spray in a large skillet, seasoning with salt and pepper, over med-high heat for 2-3 minutes until softened.
- Spray four 16 oz mason jars with cooking spray. Divide veggies, ham and cheese evenly among jars, then add a pinch each of salt & pepper and crack 2 eggs into each jar if eating within 2 days.
- To make them last longer, add everything but eggs, then add eggs fresh the morning of. They will last up to 5 days this way.
- Mix up with a fork. When ready to eat, microwave for 2 minutes. Serve and enjoy!
