Ingredients and substitutions
- Olive oil – any neutral oil like avocado, canola, or vegetable oil.
- Baby potatoes – regular potatoes like Yukon gold can be used.
- Zucchini – yellow squash or eggplant are good swaps.
- Red onion – white or yellow onion works too.
- Bell pepper – any color bell pepper, or even poblano for a mild kick.
Chicken marinade
- Chicken cutlets – chicken thighs or tenders can be used instead.
- Greek yogurt – plain yogurt or dairy-free yogurt can be substituted.
- Lemon juice – bottled lemon juice or lime juice works.
- Fresh dill – dried dill can be used less.
- Oregano – dried or fresh oregano; Italian seasoning is a fine alternative.
- Paprika – smoked paprika, regular paprika, or leave it out.
- Garlic – fresh or jarred minced garlic.
Whipped feta
- Feta cheese – pretty essential. I haven’t tested any plant-based alternatives.
- Greek yogurt – can be substituted with plain yogurt or dairy-free yogurt.
- Olive oil – any neutral oil will work.
Optional toppings
- Kalamata olives – green olives or capers work too.
- Fresh dill – dried dill can be used in smaller amounts but fresh is best. Leave out if you’re not a fan.
- Fresh parsley – leave it out if you prefer. Fresh oregano would also be nice.

How to make mediterranean chicken
Step 1: Cook the potatoes
Quarter the potatoes, coat in olive oil and seasoning and bake on a large sheet pan.
Step 2: Marinate the chicken
Mix the marinade and marinate the chicken.
Step 3: Make the whipped feta
Whip the feta, yogurt and olive oil until light and creamy.
Step 4: Cook the veggies
Add the veggies to the sheet pan and continue to bake with the potatoes.
Step 5: Cook the chicken
Sear the marinated chicken on a hot skillet until cooked through.
Step 6: Cut the chicken and assemble
Slice the chicken then serve with the veggies, whipped feta and toppings of your choice.

- Don’t overcook the chicken: Use a meat thermometer to ensure it reaches 165°F (74°C).

Storing and reheating
Storing: Divide the chicken, potatoes, and veggies into meal prep containers. Store in the fridge for up to 4 days. Keep the whipped feta in a separate container and top when serving.
Reheating: Reheat chicken and veggies in a skillet over medium heat until warmed through, or in the microwave for 1–2 minutes. Add whipped feta just before serving.
Freezing: Freeze cooked chicken, potatoes, and veggies in freezer-safe containers for up to 3 months. Just note that the veggies will get a little mushy after thawing. I don’t recommend freezing the whipped feta.
Defrosting and reheating: Transfer frozen portions to the fridge overnight. Reheat in a skillet or microwave.

- 1 tbsp olive oil
- 3 cups baby potatoes quartered
- 1 zucchini sliced
- 1 small red onion chopped
- 1 bell pepper any colour, chopped
Chicken marinade
- 4 chicken cutlets
- 2 tbsp Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh dill finely chopped; or 1 tsp dried
- 1 tsp oregano
- 1 tsp paprika
- 4 cloves garlic minced
- 1/2 tsp each salt & pepper
Whipped feta
- 1/2 cup feta cheese
- 1 tbsp Greek yogurt
- 1 tbsp olive oil
To serve; optional
- 1/2 cup Kalamata olives
- 2 tbsp Fresh dill finely chopped
- 2 tbsp Fresh parsley finely chopped
Instructions
- Preheat oven to 425 F. Add potatoes to a baking sheet and drizzle with a bit of olive oil and season with salt & pepper. Bake for 15 minutes.
- Meanwhile, mix the marinade ingredients together and marinate the chicken for 10 minutes, then prepare veggies.
- In a medium-sized bowl, blend feta, Greek yogurt and olive oil together to make the whipped feta.
- Remove the potatoes from the oven, add the veggies and drizzle with more olive oil and salt & pepper. Toss then bake for another 15 minutes.
- While veggies and potatoes finish cooking, heat a large skillet over medium-high heat. Add chicken, cooking for 5 minutes per side. Remove and let rest for 5 minutes before dicing up into bite-sized pieces.
- Divide potatoes, veggies, chicken among 4 bowls and add in whipped feta and optional add-ons. Serve and enjoy!
