Mediterranean Chicken
This zesty Mediterranean chicken with lemon-garlic flavor, olives, and herbs is a simple, high-protein meal ready in 30 minutes!

- 1 tbsp olive oil
- 3 cups baby potatoes quartered
- 1 zucchini sliced
- 1 small red onion chopped
- 1 bell pepper any colour, chopped
Chicken marinade
- 4 chicken cutlets
- 2 tbsp Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh dill finely chopped; or 1 tsp dried
- 1 tsp oregano
- 1 tsp paprika
- 4 cloves garlic minced
- 1/2 tsp each salt & pepper
Whipped feta
- 1/2 cup feta cheese
- 1 tbsp Greek yogurt
- 1 tbsp olive oil
To serve; optional
- 1/2 cup Kalamata olives
- 2 tbsp Fresh dill finely chopped
- 2 tbsp Fresh parsley finely chopped
Preheat oven to 425 F. Add potatoes to a baking sheet and drizzle with a bit of olive oil and season with salt & pepper. Bake for 15 minutes.
Meanwhile, mix the marinade ingredients together and marinate the chicken for 10 minutes, then prepare veggies.
In a medium-sized bowl, blend feta, Greek yogurt and olive oil together to make the whipped feta.
Remove the potatoes from the oven, add the veggies and drizzle with more olive oil and salt & pepper. Toss then bake for another 15 minutes.
While veggies and potatoes finish cooking, heat a large skillet over medium-high heat. Add chicken, cooking for 5 minutes per side. Remove and let rest for 5 minutes before dicing up into bite-sized pieces.
Divide potatoes, veggies, chicken among 4 bowls and add in whipped feta and optional add-ons. Serve and enjoy!
