Mediterranean Chicken

This zesty Mediterranean chicken with lemon-garlic flavor, olives, and herbs is a simple, high-protein meal ready in 30 minutes!

Ingredients

  • 1 tbsp olive oil
  • 3 cups baby potatoes quartered
  • 1 zucchini sliced
  • 1 small red onion chopped
  • 1 bell pepper any colour, chopped

Chicken marinade

  • 4 chicken cutlets
  • 2 tbsp Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill finely chopped; or 1 tsp dried
  • 1 tsp oregano
  • 1 tsp paprika
  • 4 cloves garlic minced
  • 1/2 tsp each salt & pepper

Whipped feta

  • 1/2 cup feta cheese
  • 1 tbsp Greek yogurt
  • 1 tbsp olive oil

To serve; optional

  • 1/2 cup Kalamata olives
  • 2 tbsp Fresh dill finely chopped
  • 2 tbsp Fresh parsley finely chopped

Instructions

  • Preheat oven to 425 F. Add potatoes to a baking sheet and drizzle with a bit of olive oil and season with salt & pepper. Bake for 15 minutes.
  • Meanwhile, mix the marinade ingredients together and marinate the chicken for 10 minutes, then prepare veggies.
  • In a medium-sized bowl, blend feta, Greek yogurt and olive oil together to make the whipped feta.
  • Remove the potatoes from the oven, add the veggies and drizzle with more olive oil and salt & pepper. Toss then bake for another 15 minutes.
  • While veggies and potatoes finish cooking, heat a large skillet over medium-high heat. Add chicken, cooking for 5 minutes per side. Remove and let rest for 5 minutes before dicing up into bite-sized pieces.
  • Divide potatoes, veggies, chicken among 4 bowls and add in whipped feta and optional add-ons. Serve and enjoy!

Notes

Marinate for minimum 10 mins but longer if you can. 
Divide and store the chicken, veggies and potatoes in the fridge for up to 4 days.
Freeze the chicken, veggies and potatoes for up to 3 months.
