These Buffalo Chicken Lettuce Wraps with ranch and blue cheese are a healthy, protein-packed, low carb dinner that’s on the table in 15 minutes.

My original chicken lettuce wraps were such a hit, I couldn’t not make a buffalo version. They’re just as easy, just as fresh, but these ones are packed with that classic buffalo flavour. They’re AMAZING!
Why you’ll love this recipe

Ingredients and substitutions
- Olive oil – Use avocado oil or any neutral cooking oil.

- Celery – Optional, but adds crunch.
- Carrot – Use pre-shredded carrots or swap for sliced cabbage.
- Cucumber – Swap with diced bell pepper or extra celery for crunch.
- Green onions – Chives or finely diced red onion can work.

- Ranch dressing – Blue cheese dressing or a dairy-free ranch alternative.

Recipe tips & variations
Here are some tips and variations to ensure your buffalo chicken lettuce wraps turn out perfectly every time:
- Keep your lettuce intact: Carefully peel leaves from the head to create full cups (no cutting needed!).
- Adjust spice level: Use a milder/hotter buffalo sauce or use less/more based on your spice tolerance.
- Prep ahead: Make the buffalo chicken ahead of time so you just have to reheat and assemble when it’s time to eat.
- Let it cool slightly: Make sure the filling isn’t too hot when adding to the lettuce cups.
- Veggie boost: Add more celery, carrots and cucumber. Feel free to add whatever you have one hand too, like diced bell pepper and sliced cabbage would add a fresh crunch!
- Cheese and sauce: The blue cheese and ranch sauce really make it! It’s such a nice balance with the buffalo sauce. You can use crumbled feta or blue cheese sauce or a dairy free alternative if you’d like.
Frequently asked questions
Can I use rotisserie or leftover chicken instead?
Absolutely! Shredded rotisserie or leftover cooked chicken works great here. Just add it to the skillet with the buffalo sauce and heat until warmed through.
Are buffalo chicken lettuce wraps healthy?
Yes! I love how balanced these are. They’re high in protein, low in carbs, and made with lean chicken and fresh veggies. The buffalo sauce is the only indulgence, and with the right choice, these wraps can easily fit a low-carb or keto diet.
What kind of lettuce works best for wraps?
I like using Boston or butter lettuce for these wraps because the leaves are sturdy, flexible, and hold everything together without tearing. Romaine hearts or iceberg cups work too if that’s what you have on hand.
What to serve with buffalo chicken lettuce wraps
These wraps are quite filling on their own, but here are a few ideas:
- Carrot and celery sticks with extra ranch or blue cheese sauce
- Simple side salad with homemade ranch dressing
- Crispy chips, fries or sweet potato fries

Storing and reheating
Storing: Store the cooked buffalo chicken in an airtight container in the fridge for up to 5 days. Keep the lettuce and toppings stored separately.
Reheating: Reheat the chicken in the microwave for 30–60 seconds or in a skillet over medium heat until warmed through.
Freezing: The buffalo chicken mixture can be frozen on its own in a freezer-safe container for up to 3 months. Do not freeze assembled lettuce wraps.
Defrosting and reheating: Thaw the chicken overnight in the fridge, then reheat in the microwave or on the stovetop until heated through.
