This Instant Pot Bruschetta Chicken Pasta is a delicious one pot pasta recipe that's perfect for summer, and it comes together in 30 minutes to boot!
Ingredients in bruschetta pasta
You don't need many ingredients to bring this delicious pasta to life! Here's what you need (full ingredient amounts are in the recipe card at the bottom of this page)
- boneless skinless chicken breasts
- garlic
- canned diced tomatoes
- rotini pasta
- parmesan cheese
- plum tomatoes, diced
- red onion, diced
- fresh basil (you can use dried but fresh is way more flavourful)
How to make chicken bruschetta pasta
It's super easy to make bruschetta chicken pasta in the Instant Pot! And if you don't have an Instant Pot, I have a similar Bruschetta Pasta recipe here.
Here's how to make this easy pasta:
- Add olive oil, chicken, garlic, water, diced tomatoes and rotini pasta to Instant Pot in that order – you want to make sure it's in that order to avoid getting the burn message.
- Cook on high pressure for 3 minutes, then do a quick pressure release.
- Meanwhile, make homemade bruschetta using fresh tomatoes.
- Open lid and stir parmesan cheese and bruschetta in with pasta, mixing well. Garnish with some extra fresh basil, then serve and enjoy!
Ingredient substitutions
There are a number of substitutions you can make with this recipe. Here's what you can sub in below:
- Chicken: You can use boneless, skinless chicken thighs in place of the breasts.
- Pasta: Feel free to use another larger size pasta such as penne or fusilli. Smaller pasta shapes such as macaroni may overcook so exercise discretion here.
- Tomatoes: If you don't have fresh tomatoes on hand, you can use 2 cans of diced tomatoes.
- Basil: I HIGHLY recommend fresh basil as that's where you'll get most of the flavour, but you can use 1 tsp dried basil in its place if you're in a pinch.
What to serve with chicken bruschetta
This pasta is well-rounded in terms of fresh veggies so it's really all you need for a satisfying, healthy dinner, but you can serve it with some sides.

Storing and reheating
You can store any leftover pasta in the fridge up to 5 days. To reheat, simply sprinkle some water overtop to avoid the pasta from drying out, and then microwave for 1-2 minutes. To better refresh the flavours, add some freshly grated parmesan cheese overtop along with some fresh basil.
Freezing this pasta
You can freeze this bruschetta pasta recipe pretty easily! Simply store in individual servings in glass containers or freezer safe plastic bags and you can reheat directly from frozen for 6-7 minutes in the microwave, stirring part way through. If you froze your pasta in freezer bags I recommend that you do not microwave it from frozen but instead let it defrost in the fridge overnight and then transfer to a microwave safe bowl to reheat.

Instant Pot Bruschetta Chicken Pasta
Ingredients
- 1 tbsp olive oil
- 2 medium-sized boneless skinless chicken breasts, cut into 1 inch pieces
- 2 cloves garlic minced
- 2 cups water
- 1 (796mL) can diced tomatoes in their juices
- 1 lb rotini pasta
- 1 cup parmesan cheese, grated
Bruschetta
- 5 plum tomatoes, diced
- 1 small red onion, diced
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1/2 cup fresh basil, chopped
- 1/2 each tsp Salt and pepper
Instructions
- Add olive oil, chicken, garlic, water, diced tomatoes and rotini pasta to Instant Pot in that order. Cook on high pressure for 3 minutes, then do a quick pressure release. Instant Pot will take about 10-15 minutes to preheat then cook the 3 minutes.
- Meanwhile, make homemade bruschetta by mixing all ingredients under the bruschetta heading together.
- Open lid to Instant Pot when safe to do so and pressure has been released. Stir in parmesan cheese and bruschetta, mixing well.
- Garnish with some extra fresh basil, then serve and enjoy!

I had no fresh tomatoes this time of year so I used 2cans of fire roasted tomatoes and used the juice to replace some of the water. Also used dried basil 3tsp for a more intense flavor. so good

I’m serving for 5. Wanted to use 5 chicken breasts and 2 lbs pasta. Any suggestions to up the recipe? Should I do twice the canned tomatoes? I was going to use chicken powder to make a broth instead of water. Let me know your thoughts!

Hi Tiffany! I would suggest using 3 chicken breasts if you’re looking to up the protein as this recipe already serves 6. I would not double the recipe unless you’d like lots of leftovers.

Hey Kerri you definitely can! Just dump everything in a pot and cook for about 20 minutes or until the chicken and pasta are cooked through. Add the bruschetta in after everything is cooked just as it says in the instructions below and it should be ready to go!

Your step 1 states to add the diced tomatoes to the IP before cooking. However, your video shows you adding roasted tomatoes after cooking. What is correct?

Hi Kristin – you will add the canned diced tomatoes into the pot before cooking, and then add the bruschetta mix to the Instant Pot afterward. The video reflects a former sponsorship and that product is being added after cooking. The written recipe is the correct version of the recipe, updated to reflect the expiration of the sponsorship and removal of that product.
