This Instant Pot Bruschetta Chicken Pasta is a delicious one pot pasta recipe that's perfect for summer and it’s ready in just 30 minutes!
Ingredients and substitutions
- Olive oil – or another neutral cooking oil like canola or avocado oil.
- Chicken breasts – boneless skinless chicken breasts are best but boneless skinless chicken thighs would work here too.
- Garlic – I prefer fresh minced garlic but you can use the jarred minced variety in a pinch.
- Canned diced tomatoes – feel free to swap for fresh diced tomatoes, just make sure to include all the juices.
- Rotini pasta – use another large sized pasta like penne or fusilli.
- Parmesan cheese – nutritional yeast is the best substitute here.
Bruschetta
- Plum tomatoes – if you don’t have any fresh tomatoes, you can use canned plum tomatoes.
- Red onion – white or yellow onion will work but will have a milder flavour.
- Fresh basil – fresh basil will give you the best flavour but dried basil can be substituted if it’s all you have on hand.
- Salt & pepper – to taste.

Frequently Asked Questions
Bruschetta chicken pasta combines two of your favourite things – yummy pasta and delicious bruschetta! It’s made up of a simple chicken, tomato and parmesan base with bruschetta stirred in at the end.
For this recipe, you need to cook the pasta along with the rest of the ingredients in the Instant Pot for 3 minutes. It will take the Instant Pot about 10-15 minutes to get up to the cooking temperature, so the total cook time is around 15-20 minutes.
While bruschetta is traditionally served on fresh slices of baguette, this recipe combines it with a yummy pasta. I like serving it with some nice crusty bread or garlic bread on the side!
Storing and reheating
You can store any leftover pasta in the fridge for up to 5 days. To reheat, simply sprinkle some water over top to avoid the pasta from drying out, and then microwave for 1-2 minutes. Add on some freshly grated parmesan cheese along with some fresh basil!
Freezing this pasta
You can freeze this bruschetta pasta recipe pretty easily! Simply store in individual servings in glass containers or freezer-safe Ziploc bags for up to 3 months. You can reheat directly from frozen for 6-7 minutes in the microwave, stirring partway through.
If you froze your pasta in freezer bags, I recommend that you do not microwave it from frozen but instead let it defrost in the fridge overnight and then transfer to a microwave-safe bowl to reheat.

Comments & Reviews
Shannon says
Would I need to change anything if I used spaghetti instead of rotini?
Taylor Stinson says
Spaghetti can clump together, I would not advise it for this particular recipe.
Donna L Taylor says
Tried this tonight ,my husband loved it,and so easy to put together
Lori says
This recipe is easy to prepare. Needed a little more flavour for our family. Makes a big batch of food though.
Kristen Castillo says
Your step 1 states to add the diced tomatoes to the IP before cooking. However, your video shows you adding roasted tomatoes after cooking. What is correct?
Taylor Stinson says
Hi Kristin – you will add the canned diced tomatoes into the pot before cooking, and then add the bruschetta mix to the Instant Pot afterward. The video reflects a former sponsorship and that product is being added after cooking. The written recipe is the correct version of the recipe, updated to reflect the expiration of the sponsorship and removal of that product.

Hi. Is it uncooked or cooked pasta that you put in the Instant Pot? Do we need to precook the pasta prior to this recipe?
Taylor Stinson says
It is uncooked pasta.
Kerri says
Can I make this if I don’t have an instant pot?
Taylor Stinson says
Hey Kerri you definitely can! Just dump everything in a pot and cook for about 20 minutes or until the chicken and pasta are cooked through. Add the bruschetta in after everything is cooked just as it says in the instructions below and it should be ready to go!
tiffany says
I’m serving for 5. Wanted to use 5 chicken breasts and 2 lbs pasta. Any suggestions to up the recipe? Should I do twice the canned tomatoes? I was going to use chicken powder to make a broth instead of water. Let me know your thoughts!
Taylor Stinson says
Hi Tiffany! I would suggest using 3 chicken breasts if you’re looking to up the protein as this recipe already serves 6. I would not double the recipe unless you’d like lots of leftovers.
Gina says
Can the recipe be doubled in its entirety if cooking for 8?
Taylor Stinson says
The Instant Pot will probably have a fill limit so I’m wary of saying it can be doubled.
Melinda says
Would using chicken broth instead of water throw the flavor off?
Taylor Stinson says
No chicken broth would work great! Feel free to use it 🙂
Deborah says
I had no fresh tomatoes this time of year so I used 2cans of fire roasted tomatoes and used the juice to replace some of the water. Also used dried basil 3tsp for a more intense flavor. so good
Taylor Stinson says
I’m so happy you enjoyed, Deborah!
John says
Was anyone else’s really watery after opening the instant pot?
Taylor Stinson says
Giving it a good stir and letting it sit for 2-3 minutes sometimes does the trick!
