This Instant Pot Bruschetta Chicken Pasta is a delicious one pot pasta recipe that's perfect for summer and high in protein! And it comes together in less than 30 minutes thanks to your pressure cooker!

Let's talk a little bit about my summer obsession with bruschetta…
Thanks in part to that obsession, we now have bruschetta pasta, with chicken, all made easy in the Instant Pot.
This pasta is high in protein thanks in part to the chicken, and you get all your fresh summer veggies in there along with some delectable jarred roasted cherry tomatoes, then of course a little parmesan cheese and some carbs by way of the pasta never hurts.

Now you may have noticed that I've used a mixture of jarred roasted tomatoes and some fresh plum tomatoes. This is the key combination that I believe makes this Bruschetta Chicken Pasta such winner.
And you should know by now that I loooooooove President’s Choice and their PC Black Label – we've worked on so many delicious recipes together that I've almost lost track! Secretly, I think this Instant Pot pasta ranks as one of my faves and I couldn't have made it without their delicious roasted cherry tomatoes!
Each month I get sent a black box with a bunch of cool foodie ingredients from the PC Black Label line – it's always a surprise as to what I'm going to get, and I always look forward to playing around in the kitchen and seeing how I can use it all.
This month I received PC Black Label Pasta Flour, PC Black Label Sambal Matah (a sweet chili condiment that's a product of Indonesia) and of course the PC Black Label Roasted Cherry Tomatoes I used in this pasta (they would also be bomb in this Asparagus Margherita Stuffed Chicken!)
Of course the cherry tomatoes immediately stood out to me and for a while there I thought about creating some sort of Mexican dish – think pulled chicken in a roasted cherry tomato sauce with some cilantro and cumin. But then I got to reading the label (and maybe doing a little taste testing hehe), and discovered that they are marinated in oil, garlic, oregano and basil – and they're a product of Italy.
Let me tell you, these tomatoes are a match made in heaven with pasta – and I could see them being AMAZING on a pizza. They bring such a vibrant pop of flavour to whatever summer dish you're whipping up, along with a richness that only marinated tomatoes could provide.
I decided to play into the herbs and mix the jarred roasted tomatoes with some fresh plum tomatoes now that they're finally starting to come into season around here, and they create a beautiful sauceless pasta that is off the charts!
Let me break down this Instant Pot Bruschetta Chicken Pasta a bit further for you.
First of all, it's the perfect dish for summer because of all the fresh seasonal flavours, but it's also pretty awesome because you don't have to turn on the oven or stovetop. This is where the Instant Pot comes into play.
I always struggle when it comes to cooking in the heat. Just about any appliance except for the BBQ heats up the house, and since I'm living in a third floor apartment within a house right now it's especially crucial for me to find ways to cool the place down. The oven is NEVER an option, let's just say that.
Since I already love making Instant Pot pasta, I knew this bruschetta chicken pasta was going to be perfect.
As with my other Instant Pot pasta recipes, you'll cook the chicken and pasta together with some water and then stir in the roasted cherry tomatoes and fresh plum tomato bruschetta together.
Be sure to make the bruschetta while the pasta is cooking in the Instant Pot. If you time it right, everything comes together in under 30 minutes, and as you know that's my fave kind of dinner – especially during the summer months when you have so many fun activities to look forward to and more reasons to get outside.
If you can't get your hands on a jar of the PC Black Label roasted cherry tomatoes, you can go ahead and substitute with the same amount of canned diced tomatoes (I would recommend fire roasted) or you can use two jars of sundried tomatoes packed in oil (make sure you drain them).
This way you still get similar flavours and a richness that fresh tomatoes alone just can't provide.

Instant Pot Bruschetta Chicken Pasta
- 1 tbsp olive oil
- 2 medium-sized boneless skinless chicken breasts, cut into 1 inch pieces
- 2 cloves garlic minced
- 4 cups water
- 1 lb rotini pasta
- 1 (280 mL) jar PC Black Label jarred roasted cherry tomatoes Note: You can sub in 1.5 cups canned diced tomatoes if you can't get the cherry tomatoes
- 1 cup parmesan cheese, grated
- 5 plum tomatoes, diced
- 1 small red onion, diced
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1/2 cup fresh basil, chopped
- 1/2 each tsp Salt and pepper
- Add olive oil, chicken, garlic, water and rotini pasta to Instant Pot in that order. Cook on high pressure for 3 minutes, then do a quick pressure release. Instant Pot will take about 10-15 minutes to preheat then cook the 3 minutes.
- Meanwhile, chop up jarred cherry tomatoes (or use diced canned tomatoes). Make homemade bruschetta by mixing all ingredients together.
- Open lid to Instant Pot when safe to do so and pressure has been released. Stir in cherry tomatoes, parmesan cheese and bruschetta, mixing well.
- Garnish with some extra fresh basil, then serve and enjoy!
