- 1/2 cup BBQ sauce

- 3 cups red cabbage shredded
- 1/2 cup carrot matchsticks
- 2 tbsp vinegar
- 2 tbsp honey
- 1 tsp avocado oil
- 1/2 tsp salt
- 1/4 tsp pepper
To serve
- 12 slider buns
- 1 tbsp melted butter optional, for brushing sliders
- 1/2 cup pickles
- 2 tbsp cilantro finely chopped
Instructions
- Bring a large pot of salted water to a boil, then add chicken. Cook for 15 minutes until chicken is cooked through, then drain and shred chicken with 2 forks. Toss in BBQ sauce and set aside.
- Meanwhile, preheat oven to 350 F. Mix red cabbage and carrot matchsticks with vinegar, honey, avocado oil and salt and pepper, tossing to combine. Let sit at least 15 minutes.
- While chicken is cooking and after slaw has been made, get sliders ready. Let the sliders sit on the counter for a couple of minutes so they can harden (they will be soft from being in the package), then slice the top away from the bottom.
- Add to a parchment-lined baking sheet, then divide chicken among bottom bun and top with top buns. Melt butter for 30 seconds in the microwave, then brush the tops of sliders with the butter. Bake for 10 minutes until the top buns are golden brown.
- Remove from oven, then remove the top bun and add pickles, slaw and cilantro overtop of chicken. Serve and enjoy!
