This Hibachi Steak is just like the kind you get at Benihana – it’s a delicious Japanese-inspired dish served with fried rice and sautรฉed vegetables.

I don’t know about you but a trip to Benihana is just not happening in this economy. It’s one of my favourite restaurants and I wish I went more often until I learned how to make the hibachi steak at home. ๐

Ingredients and substitutions

Hibachi steak marinade
- Sesame oil – canola oil, sunflower oil or grapeseed oil can be used instead.
- Soy sauce – tamari, liquid aminos or coconut aminos would all work.
- Hoisin sauce – teriyaki sauce or a combination of soy sauce and brown sugar will provide a similar flavour.
- Garlic – use fresh or jarred minced garlic for this recipe.
- Ginger – use fresh or jarred grated ginger for this recipe.
Mustard sauce
- Light mayo – use Greek yogurt as a healthier alternative to mayo.
- Soy sauce – tamari, liquid aminos or coconut aminos will also work.
- Rice vinegar – white wine vinegar, champagne vinegar or lemon juice can be used instead.
- Dijon mustard – stone ground mustard is the best substitute here.
Sautรฉed vegetables
- Olive oil – any neutral oil such as grapeseed oil or avocado oil.
- Carrot, mushrooms, yellow onion and zucchini – feel free to use any vegetables of your choice.
- Soy sauce – tamari, liquid aminos or coconut aminos would all work.
Benihana fried rice
- White rice – any white rice such as basmati or jasmine is recommended.
- Butter – vegetable oil or canola oil can be used in place of butter.
- Garlic – fresh or jarred minced garlic.
- Soy sauce – tamari or coconut aminos can be used instead.
- Egg – if youโre not a fan of egg leave it out altogether.
- Green onion – leave out altogether if youโre in a pinch.

How to make hibachi steak

Step 1: Marinate the steak.
Mix together the hibachi steak marinade ingredients, then marinate the steak for at least 20 minutes.
Step 2: Sautรฉ the veggies.
Sautรฉ the vegetables until tender crisp. Stir in the soy sauce, then remove from the pan.

Step 3: Make the fried rice.
Sautรฉ the garlic in butter until fragrant, then add the rice and soy sauce. Scramble an egg in the center, then stir in the green onions.
Step 4: Cook the steak.
Cook the steak until cooked through, then let it rest.

Step 5: Make the mustard sauce.
Mix together the sauce ingredients.
Step 6: Slice up the steak.
Slice up the steak, then serve it with the fried rice and sautรฉed veggies with the mustard sauce on the side for dipping.

You can customize this hibachi steak recipe with different protein options, side dishes and sauces:
- Protein: Try making hibachi chicken or hibachi shrimp instead.
- Vegetables: Add in more veggies like bell peppers, green beans, corn, broccoli or cauliflower.
- Fried Rice: For a low-carb option, serve your hibachi steak with cauliflower fried rice.

What kind of steak is used in hibachi?
Sirloin or strip steaks are the most common cuts of beef used to make hibachi steak. For this recipe, I used sirloin steak, but strip steak would work just as well.
How long should you cook the steak for?
It depends on how you like your steak cooked. For medium rare, cook about 2 minutes per side; for medium, 3 minutes per side; for medium-well, 3-4 minutes per side; and for well done, 4-5 minutes per side. You can use a meat thermometer to check the doneness of the steak.

What is the secret to good fried rice?
The trick to making the best fried rice is to use leftover rice. You can cook the rice ahead of time, then store it in the fridge until you’re ready to make your fried rice.

Meal prep and storage
Ingredient prep: Wash and chop up all the veggies, cook the rice, dice the steak, make the hibachi marinade and make the mustard sauce up to 3 days in advance. Store everything in separate containers.
To store: Store the leftovers in airtight containers for 5 days.
To freeze: Freeze the fried rice and steak for up to 3 months, then thaw in the fridge overnight.
To reheat: Reheat in a skillet on the stovetop or in the microwave for 1-2 mins. If microwaving, sprinkle some water over top first so the rice and steak don’t dry out.

Perfect Hibachi Steak
Ingredients
- 1 lb top sirloin steak
Hibachi steak marinade
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 4 cloves garlic, minced
- 1 tbsp fresh minced ginger
Mustard sauce
- 1/2 cup light mayo
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp dijon mustard
Sauteed vegetables
- 1 tbsp olive oil
- 1 carrot, thinly sliced
- 1 cup mushrooms, sliced in half
- 1 yellow onion, chopped
- 1 zucchini
- 1 tbsp soy sauce, plus salt & pepper to taste
Benihana fried rice
- 2 cups cooked white rice
- 2 tbsp butter
- 4 cloves minced garlic
- 3 tbsp soy sauce
- 1 egg
- 4 green onions, sliced
Instructions
- Cook rice in a rice cooker or on the stovetop according to package directions. Alternatively, make rice up to 2 days before.
- Mix together ingredients for the hibachi steak marinade in a small bowl, then pour over the steak in a large bowl or freezer bag, marinating for 20 minutes. Mix ingredients for mustard sauce together at the same time.
- Add olive oil to a large pan over high heat, then add vegetables and season with salt & pepper, cooking for 5 minutes or so until veggies are tender-crisp. Stir in 1 tbsp soy sauce, then remove from heat and set aside in a large bowl.
- Melt butter in the same pan, then saute garlic for 30 seconds until fragrant. Add in rice and soy sauce, cooking for 5 minutes until rice is heated through.
- While the rice is cooking, cook steak in another medium-sized skillet over med-high heat for 3-5 minutes per side, depending on the thickness of the steak. Remove from pan and wipe pan clean, letting steak rest for 10 minutes.
- To finish off rice, make a hole in the center of rice and crack in egg, scrambling until egg is just set. Toss rice and stir in green onions, then remove from heat.
- Slice up steak, then serve with rice, vegetables and mustard sauce on the side. Enjoy!
