Overnight oats are my absolute favourite breakfast to meal prep for the week and these pumpkin overnight oats are loaded with protein and all those fall flavours you love.

- Rolled oats – Use old-fashioned rolled oats for the best texture. Quick oats will work but will be softer.
- Greek yogurt – Use any plain dairy-free yogurt for a dairy-free option.
- Pumpkin puree – Use canned pumpkin puree or homemade pumpkin puree.
- Soy milk – Use any dairy or non-dairy milk, such as almond, oat or dairy milk.
- Chia seeds – No direct substitute, but you can use extra ground flax if needed.

- 1/2 cup rolled oats
- 3/4 cup Greek yogurt
- 1/3 cup pumpkin puree
- 1/4 cup soy milk or any dairy or non-dairy milk of choice
- 1 tbsp chia seeds
- 1 tbsp ground flax
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp dried ginger
Instructions
- To a jar, add all of the ingredients, mixing well until combined. Repeat for as many jars as you'd like to make.
