TASTY VEGETARIAN DINNER IDEA

These Vegetarian Stuffed Peppers are easy to make and so delicious! They have a delicious Mexican-inspired quinoa and black bean filling.

Ingredients

Step 1 Cut and deseed the peppers, then roast them in the oven. Meanwhile, cook the quinoa.

Step 2 Sauté the veggies and seasonings, then stir in the cooked quinoa to make the filling.

Step 3 Add the filling to the peppers, then top with cheese.

Step 4 Bake in the oven, then serve and enjoy!

Storing and reheating Store the leftovers in the fridge for up to 5 days. Reheat in the microwave for 1-2 mins or in a baking dish in the oven for 30 mins at 375° F.
