LOADED BUFFALO CHICKEN FRIES

These Loaded Buffalo Chicken Fries are a healthier alternative to game day food, made with homemade fries and topped with two kinds of cheese!

Step 1 Preheat oven to 450 F. Slice potatoes into fries, then rinse under cold water to remove as much starch as possible.

Step 2  Dry fries with a clean towel, then toss in a large bowl with olive oil, salt and pepper.

Step 3 Line two baking sheets with parchment and insert both into oven on middle rack, cooking for 13-15 min. Flip fries, then cook another 8-10 min.

Step 4 Meanwhile, heat olive oil in skillet on med-high heat. Add chicken and salt, sauteeing for 3-4 min until browned. Add buffalo wing sauce and cook for another 8-10 min until cooked through. Remove from heat and set aside.–

Step 5 Remove fries from oven when done cooking. Top with grated mozzarella and return to oven, cooking another 5 min or so until cheese is melted. Remove from oven and top with chicken, blue cheese, green onion, tomato and cilantro. Serve immediately and enjoy!

Storing and Reheating Make sure you separate the fries and toppings for the best results. You can reheat the fries in the oven at 350° Fahrenheit for about 10 minutes, then add on all of your toppings fresh.
