Southwest Chicken Wrap

This Southwest chicken wrap is loaded with juicy chicken, corn, peppers and chipotle sauce. It's an easy, high-protein meal on the go.

Equipment

Ingredients

  • 4 large flour tortillas
  • 1 tbsp olive oil
  • 1 lb chicken breasts sliced into 1-inch pieces
  • 1 tbsp southwest seasoning
  • Salt & pepper to season
  • 1 red pepper sliced
  • 1 small red onion sliced
  • 1/2 cup corn
  • 1/2 cup black beans
  • 1 cup cheddar cheese grated
  • 1/2 cup cilantro finely chopped

Chipotle sauce

  • 1/2 cup sour cream
  • 2 tbsp light mayo
  • 1 tbsp chipotles in adobo sauce
  • 1 tbsp water

Instructions

  • Mix southwest seasoning blend together. Heat olive oil in a large skillet over medium-high heat. Toss chicken with seasoning blend, season with salt and pepper, then cook for 6-7 minutes and remove from heat.
  • Meanwhile, mix chipotle sauce ingredients together and prep remaining fillings.
  • Add a bit more olive oil to the pan then saute red pepper and red onion for 5 minutes, seasoning with salt and pepper, until softened. Add black beans and corn, cooking another minute. Remove from heat.
  • Divide chicken, peppers and onions, corn, black beans, chipotle sauce, cilantro and cheese in that order, among 4 flour tortillas then push sides in and roll wrap away from you.
  • Place back in the skillet with a bit of cooking spray, cooking for 1 minute each side over medium heat. Cut each wrap in half, serve and enjoy!

Notes

Use rotisserie or leftover chicken and season with southwest spice blend to make these quicker.
If you enjoy a bit of heat, try adding jalapeños, hot sauce, or extra chipotle to spice things up.
Feel free to switch up the protein by using shrimp, ground turkey, ground beef or pulled pork instead of chicken.
To make these wraps ahead, wrap them (ungrilled) in foil and freeze for up to 2 months. Just thaw and toast when ready to eat.
