White Cheddar Truffle Mac and Cheese

  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cups 2% milk
  • 1/2 lb macaroni
  • 1 1/2 cups aged white cheddar cheese
  • 1 cup Swiss cheese
  • 1 tsp truffle oil
  • 1/2 tsp salt
  • 1/4 tsp pepper


  • Boil water over high heat, then cook macaroni for 8-9 minutes until al dente.
  • Meanwhile, in a deep, large pot, melt butter over medium heat. Add flour, whisking frequently. Add milk 1 cup at a time, whisking to remove lumps and stirring until thickened and almost to a boil.
  • Add salt and pepper, cooked pasta then stir in cheeses and truffle oil. Remove from heat and serve immediately in small serving dishes.
