This vegan Tofu Scramble is the best alternative to scrambled eggs! It's a quick and easy breakfast made in one pan and loaded with veggies.

Ingredients

Step 1 Crumble the tofu and cook until most of the liquid releases.

Step 2 Add in the veggies, nutritional yeast, turmeric and salt. Cook for another 5 minutes.

Step 3 Stir in the spinach and cook for another minute.

Step 4 Add the plant-based milk, remove from the heat and serve!

Storing and reheating Store the tofu scramble in the fridge for 2-3 days. Reheat in the microwave for 1-2 minutes or in a pan on the stovetop.
