MEAL PREP BREAKFAST

This easy Microwave Omelette is perfect for meal prep! Make it ahead of time with your favourite toppings for a quick and healthy breakfast.

Ingredients

Step 1 Season the veggies with salt and pepper, and sauté until softened.

Step 2 Spray the mason jars with cooking spray.

Step 3 Divide the veggies, ham and cheese amongst the jars. Add salt and pepper, and crack in two eggs.

Step 4 Microwave for 2 minutes or store in the fridge for later.

Storing and reheating Store the jars with eggs for 2 days, or without eggs for 5 days. When you're ready to eat, microwave the jar for 2 minutes.
