- 1 can black beans
- 1 can black eyed peas
- 1 cup corn
- 1 cup red cabbage finely chopped
- 1 orange pepper diced
- 1/2 red onion finely diced
- 1 cup cherry tomatoes sliced in half
- 1 jalapenos deseeded and minced
- 1/2 cup feta cheese crumbled
- 1/4 cup cilantro finely chopped
Dressing
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 2 tsp southwest spice blend or 1 tsp cumin
- 1 tbsp honey
- 2 cloves garlic minced
- 1/2 tsp each salt & pepper
Mix dressing ingredients together and set aside.
Mix all beans and vegetables in a large bowl. Toss with dressing well to combine. Serve right away and enjoy, or let sit up to 30 minutes for flavours to meld before enjoying.
Drain and rinse the beans and corn well to avoid excess moisture in the salad.
If you're not a fan of cilantro, swap it with parsley or leave it out altogether.
For a bit more crunch, add diced cucumber or chopped celery just before serving.
This salad tastes even better after sitting for 30 minutes to let the flavours meld.
