Buffalo Chicken Meatballs

These Healthy Buffalo Chicken Meatballs are a freezer-friendly lunch or dinner idea – they’re also perfect for meal prep!

Ingredients

Meatballs

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 tbsp buffalo sauce
  • 1/2 red onion grated
  • 2 cloves garlic minced
  • 2 tsp dried dill optional
  • 1/2 tsp each salt and pepper

Celery Slaw

  • 2 cups coleslaw mix
  • 2 stalks celery including celery leaves, finely chopped
  • 2 tbsp apple cider vinegar
  • 2 tbsp light mayo
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper

To serve

  • 1/2 cup buffalo sauce
  • 1 tbsp Ranch dressing optional, for drizzling
  • 1/4 cup Blue cheese crumbled, for garnish
  • 1 green onion sliced, for garnish

Optional side dish ideas

  • Oven fries
  • Rice

Instructions

  • Preheat oven to 425° F. Mix together ingredients for meatballs, then form into 1-inch balls and place on a parchment-lined baking sheet. Spray with cooking spray. Bake for 18-20 minutes until fully cooked.
  • Meanwhile, mix all ingredients together to make celery slaw, prep any other desired side dishes and slice green onions for garnish.
  • Remove meatballs from the oven, then toss with 1/2 cup of buffalo sauce in a large bowl. Drizzle meatballs with ranch and garnish with crumbled blue cheese and sliced green onions. Serve with celery slaw and choice of side and enjoy!

Notes

Make this recipe in a crockpot to keep them warm for a party.
Store the leftovers in the fridge for up to 5 days. Reheat in the oven for 10-15 minutes at 400° F then toss in more sauce.
Freeze these meatballs either cooked or uncooked for up to 3 months. Defrost in the fridge overnight then reheat or cook as normal.
