- 1 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp vinegar
- 2 cloves garlic minced
- 1/2 tsp each salt and pepper
- 1 lb chicken breasts diced into 1-inch strips
- 3 bell peppers any colour, sliced
- 1 red onion sliced
- 1 cup cheddar cheese grated
- 1/2 cup cilantro finely chopped, optional garnish
- 12 corn tortillas to serve (optional)
Preheat air fryer to 400 F for 10 minutes. Mix olive oil, fajita seasoning, lime juice, soy sauce, vinegar, minced garlic, salt and pepper together in a small bowl.
Add chicken, peppers and onions to a large bowl, then pour sauce overtop, tossing well to combine. Add to air fryer, and Air fry at 400 F for 10 minutes.
Serve mixture in warm corn tortillas (microwave them for 30 seconds), then sprinkle with cheese and cilantro. Enjoy!
Chicken thighs can be used instead of breasts for a juicier option.
Feel free to swap in other veggies like zucchini or mushrooms if you have extras to use up.
If you don’t have fajita seasoning, mix chili powder, cumin, paprika, and garlic powder as a quick substitute.
For best results, avoid overcrowding the air fryer and cook in batches if needed to get a nice char.
