Baked Greek Meatballs with Tzatziki

These Baked Greek Meatballs are so good! They're made healthier with ground chicken and served with potatoes, veggies and tzatziki.

Ingredients

Potatoes

  • 4 cups baby potatoes sliced in half
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt & pepper to taste

Greek meatballs

  • 1 lb ground chicken
  • 1 small yellow onion grated
  • 2 cloves minced garlic
  • 1 tbsp finely chopped parsley
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1/2 tsp each salt & pepper

To serve

  • 1 cup Sliced cherry tomatoes
  • 1 cup Sliced cucumber
  • 1/2 cup Thinly sliced red onion
  • 2 tbsp Finely chopped parsley
  • 1/2 cup Store bought tzatziki

Instructions

  • Preheat oven to 425 F. Toss potatoes with olive oil, lemon juice, oregano and salt and pepper on a parchment-lined baking sheet. Bake for 20 minutes.
  • While potatoes are cooking, mix ground chicken in a large bowl with grated onion, garlic, parsley, lemon zest, oregano, dill and salt & pepper. Roll meat mixture into meatballs, placing on a cutting board then adding to baking sheet with potatoes once the potatoes have cooked for 20 minutes.
  • Bake meatballs and potatoes another 20 minutes. While that's cooking, prep cherry tomatoes, cucumber and red onion, tossing with parsley and a little bit of olive oil and salt & pepper to taste.
  • Serve potatoes, meatballs, veggies and tzatziki in bowls and enjoy!

Notes

You could also try making your Greek meatballs with ground turkey or pork.
Serve with some pita bread, cauliflower rice or farro.
Store the leftovers in the fridge for up to 5 days. Eat them cold or reheat in the microwave for 1-2 minutes.
Flash freeze the meatballs on a tray then freeze them for up to 3 months. Reheat from frozen in the microwave for 3-4 minutes, or defrost in the fridge overnight and reheat as normal.
