Slow Cooker Honey Garlic Chicken

These Slow Cooker Honey Garlic Chicken Thighs are amazing! Cook hands-off in the crockpot and serve with broccoli and rice for a full meal.

Ingredients

  • 1 tbsp sunflower or chili oil
  • 1/4 cup low sodium soy sauce
  • 2 tbsp honey
  • 4 cloves minced garlic
  • 1 tsp sriracha
  • 8 boneless, skinless chicken thighs
  • 1 head broccoli chopped into florets

Rice

  • 1 1/2 cups water
  • 1 cup white rice
  • 1 pinch salt

Optional garnishes

  • 2 green onions sliced
  • Sesame seeds

Instructions

  • Add sunflower oil, soy sauce, honey, garlic and sriracha to the slow cooker, mixing well. Toss chicken thighs in mixture, then cook on high for 3 hours or on low for 6 hours.
  • Half an hour before cooking time is up, add water, rice and salt to a rice cooker or pot on the stove and cook until the liquid has absorbed. At the same time, microwave broccoli in a large bowl of water for 10 minutes, then drain.
  • Serve chicken thighs on top of rice with broccoli on the side and garnish with green onions and sesame seeds if desired. Enjoy!

Notes

Serve your chicken thighs with a side salad, glazes carrots, sweet potato fries and more.
You can also try using this recipe to make boneless skinless chicken breasts. Use 4 chicken breasts instead of 8 chicken thighs.
Store the leftovers in the fridge for up to 5 days. Sprinkle some water over top then reheat in the microwave for 1-2 minutes.
Freeze this recipe for up to 3 months. Defrost in the fridge overnight then reheat as normal.
