Loaded Buffalo Chicken Fries

These Loaded Buffalo Chicken Fries are a healthier alternative to traditional game day food, made with homemade oven fries and topped with mozzarella and blue cheeses!

Homemade oven fries

  • 1 tbsp olive oil
  • 3 large russet potatoes, cut into fries
  • 1 tsp salt
  • 1/4 tsp pepper

Buffalo chicken

  • 1 tbsp olive oil
  • 3 chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 cup buffalo wing sauce (I like Frank's red hot or the PC brand!)


  • 1 cup grated mozzarella cheese
  • 1/2 cup blue cheese, crumbled
  • 4 green onions
  • 1 handful chives, minced
  • 2 plum tomatoes, diced
  • 1/3 cup chopped fresh cilantro
  • Carrots and celery to serve

Quick Blue Cheese Dip

  • 1/2 cup crumbled blue cheese
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/3 cup mayo
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp salt


  • Preheat oven to 450 F. Slice potatoes into fries, then rinse under cold water to remove as much starch as possible. Dry fries with a clean towel, then toss in a large bowl with olive oil, paprika, salt and pepper.
  • Line two baking sheets with parchment and insert both into oven on middle rack, cooking for 13-15 min. Flip fries, then cook another 8-10 min.
  • Meanwhile, heat olive oil in skillet on med-high heat. Add chicken and salt, sauteeing for 3-4 min until browned. Add buffalo wing sauce and cook for another 8-10 min until cooked through. Remove from heat and set aside.
  • Remove fries from oven when done cooking. Top with grated mozzarella and return to oven, cooking another 5 min or so until cheese is melted. Remove from oven and top with chicken, blue cheese, green onion, chives, tomatoes and cilantro. Serve immediately and enjoy!
