These 15-Minute Udon Noodles are a fast and easy weeknight vegetarian dinner idea! They're stir-fried to perfection with the best sauce.

Ingredients

Step 1 Sauté the coleslaw mix until softened.

Step 2 Soften the noodles in a bowl of boiling water, then drain and set aside.

Step 3 Toss together the coleslaw mix, noodles, edamame and sauce ingredients.

Step 4 Stir in the green onions, garnish with sesame seeds and sesame oil, then serve!

Storing and reheating Store any leftovers in the fridge for up to 5 days. Reheat in a pan on the stovetop or in the microwave for 1-2 minutes.
