COMFORTING & DELICIOUS SOUP

This Roasted Red Pepper Soup is made from fresh roasted peppers, onions and garlic. It's a comforting and delicious healthy dinner or lunch.

Ingredients

Step 1 Roast the red pepper with the onions and garlic cloves in the oven.

Step 2 Once the roasted veggies have cooled, add to a blender with the remaining ingredients.

Step 3 Blend until smooth, adding salt and pepper to taste.

Step 4 Add on your toppings and serve!

Storing and reheating Store the leftovers in the fridge without the toppings for 5 days. Bring to a simmer in a pot on the stovetop or microwave for 1-2 minutes.
