Shrimp Skewers (Best Marinade!)
These easy shrimp skewers with a zesty lemon, herb and garlic marinade are perfect for summer grilling, and they're ready in 20 minutes.

Marinade
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 4 cloves garlic minced
- 1 tbsp dijon mustard
- 1 tbsp fresh chopped parsley or 1 tsp dried
- 1 tbsp fresh chopped basil or 1 tsp dried
- 1/4 tsp chili flakes
Veggies
- 1 bell pepper any colour, chopped
- 1 small red onion chopped
- 1 zucchini sliced
Preheat the BBQ to 425 F. Mix the shrimp and veggies with the marinade ingredients in a large bowl and marinate for 5-10 minutes.
Add shrimp and veggies to skewers, alternating adding each shrimp and vegetable, then place on the grill and cook for 5 minutes per side.
Serve with garlic bread or rice on the side and enjoy!

Pat the shrimp dry before marinating to help the flavours stick better.
Cut the veggies into even pieces so they cook at the same rate as the shrimp.
