  • 2 tbsp canola oil
  • 1 lb chicken breasts, diced
  • 1/3 cup cornstarch
  • 4 green onions, sliced
  • Sesame seeds, for garnish

Orange chicken sauce

  • 1/3 cup orange juice preferably from an orange
  • 1 tbsp honey
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 4 cloves garlic, minced
  • 1 tsp orange zest
  • 1 tsp ginger, minced

  • 1 1/4 cups water
  • 1 cup white rice
  • 1 tsp butter
  • 1 pinch salt

  • Mix together sauce ingredients in a bowl and set aside. Add rice ingredients to a rice cooker and cook.
  • Toss chicken with cornstarch in a large bowl. Heat canola oil in a large skillet over med-high heat. Once oil is smoking, add chicken and stir fry for 6-7 minutes until browned and cooked through.
  • Toss chicken with sauce, then serve over rice. Garnish with green onions and sesame seeds, then serve and enjoy!

Coat the chicken in cornstarch and make sure the pan is very hot to get the best crispy chicken.
Make the rice on the stovetop, in a rice cooker or even in the Instant Pot.
Serve with cauliflower rice for a low-carb option.
Store any leftovers in the fridge for up to 5 days then reheat in a skillet over medium-high heat.
Freeze for up to 3 months then thaw in the fridge overnight, reheat and serve with fresh rice.
