Homemade Greek Fries With Chicken {Oven-Baked}

Greek chicken
- 1 lb chicken breasts diced
- 2 tbsp olive oil
- 2 tbsp freshly squeezed lemon juice
- 2 cloves garlic minced
- 1 tbsp dried oregano
- 1/2 tsp salt
- 1/4 tsp pepper
Fries
- 2 Russet potatoes
- 1 tbsp olive oil
- salt & pepper to taste
Topping ideas
- shredded mozzarella cheese or feta cheese
- red onion
- tomato
- cucumber
- Kalamata olives
- fresh parsley
- tzatziki
- hummus
Preheat oven to 450 degrees.
In a large bowl, mix together olive oil, lemon juice, garlic, oregano, salt and pepper. Add chicken and marinate up to 10 minutes.
Meanwhile, cut potatoes into 1/2 inch thick fries, then rinse to remove starch. Dry off with a clean kitchen towel, then toss with olive oil and salt and pepper on a parchment-lined baking sheet. Bake for 15 minutes then flip and bake another 10-12 minutes.
While fries are roasting, cook chicken in a skillet over med-high heat for 6-8 minutes until browned and cooked through. You can also prepare toppings of choice at this time.
When fries are done, add mozzarella and cook another 5 minutes until cheese is melted. Remove from oven then top with chicken and toppings of choice. Serve and enjoy!
Make your own homemade tzatziki sauce. For a low-calorie option, use low-fat Greek yogurt.
Soaking the fries in water is key – you want to make sure to rinse off all the starch so they’re nice and crispy.
Store any leftovers in the fridge for up to 4 days. Reheat in the oven at 350° F or in the microwave.
Freeze the leftover chicken for up to 3 months.
