Meal Prep Taco Bowls
These taco bowls are loaded with ground meat, rice, beans, veggies and cilantro-lime crema. They're high in protein, fibre and meal preppable!

- 1 tbsp olive oil
- 1 lb ground chicken or ground turkey or beef
- 1 tbsp taco seasoning or 2 tsp chili powder and 1 tsp cumin
- 1 cup black beans rinsed and drained
- 1 cup romaine lettuce finely chopped
- 1/2 cup red cabbage thinly sliced
- 1/2 cup salsa or pico de gallo
- 1/2 cup corn
- 1/4 cup cheddar cheese grated
Rice
- 1.5 cups water
- 1 cup white rice
Cilantro lime crema
- 1/2 cup sour cream
- 1/4 cup cilantro
- 2 tsp lime juice
- 1/4 tsp salt
Optional toppings
- tortilla chips
- guacamole or chopped avocado
- jalapenos
- lime wedges
- extra cilantro for topping
Add rice and water with a pinch of salt and oil to a rice cooker or pot on the stove and cook until all liquid has absorbed.
Add sour cream, cilantro, lime juice and salt to a blender or blend together in a bowl with an immersion blender.
Heat olive oil in a large skillet, then add ground chicken, seasoning with salt and pepper and breaking up with a spatula. Add taco seasoning, then saute for 7-8 minutes until fully cooked.
Meanwhile, prepare toppings.
Divide cooked rice, ground meat and toppings among 4 bowls, then drizzle with sauce. Serve and enjoy!

Store in air tight containers in the fridge for up to 3-4 days.
Reheat meat and rice in the microwave if desired.
Freeze the cooked ground meat and rice in separate freezer safe bags or containers for up to 3 months. Defrost in the fridge overnight and reheat.
