Ingredients

  • 2 cups corn frozen, defrosted
  • 1/2 cup red onion finely diced
  • 1 jalapeno pepper deseeded and finely diced
  • 2 tbsp cilantro finely chopped
  • 2 limes juiced
  • 1/2 tsp cumin
  • 1/2 tsp salt

Instructions

  • Mix all ingredients together in a large bowl. Serve in burrito bowls, tacos or with chips.

Notes

Serving size is 1/3 cup. 
Pat the corn dry to avoid excess moisture in the salsa.
Dice the onion and jalapeño finely for even flavour in every bite.
Adjust the lime and salt to taste for the perfect zesty balance.
Let the salsa sit for at least 10 minutes before serving to let the flavours meld.
