Easy Chicken Apple Sausage

- 1 lb ground chicken
- 1/2 apple grated
- 1 tsp fennel seeds
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp garlic powder
- 1/4 tsp cinnamon
- 1/2 tsp each salt & pepper
- 1 tbsp olive oil for frying
Mix ground chicken, grated apple and spices together in a large bowl. Form into 6 equal 1/2-inch thick patties, placing on a parchment or wax paper-lined baking sheet until ready to fry.
Heat olive oil in a large skillet over medium-high heat. Add patties (you may have to do in batches to avoid crowding), cooking for 4-5 minutes per side.
Remove from heat and serve in breakfast sandwiches or along with eggs, arugula and bagels. Enjoy!
For the best texture, grate the apple finely and squeeze out any excess liquid so the patties hold together well.
A hot skillet and a light coating of oil will help them brown evenly without sticking.
These sausages can be made ahead by shaping the patties and keeping them covered in the fridge for up to 24 hours before cooking.
Cooked patties will stay fresh in the fridge for up to 4 days, and they reheat well in a skillet over low heat or in the microwave for about a minute.
If you’d like to freeze them, let the cooked patties cool completely, then store in a freezer bag for up to 3 months.
