Cinnamon Roll Overnight Oats

These Cinnamon Roll Overnight Oats taste like a cinnamon bun but are packed with protein and make the perfect grab-and-go breakfast!

Ingredients

  • 1 1/3 cups rolled oats
  • 2 cups milk dairy or non-dairy
  • 2 cups plain Greek yogurt
  • 1/4 cup ground flax
  • 2 tbsp maple syrup
  • 2 tbsp brown sugar
  • 1 tbsp vanilla extract
  • 2 tsp cinnamon

Topping

  • 2 tsp brown sugar
  • 1 tsp cinnamon

Frosting

  • 1 tbsp butter softened
  • 1/3 cup powdered sugar
  • 1 tsp milk
  • 1/4 tsp vanilla

Instructions

  • Mix together rolled oats, milk, Greek yogurt, ground flax, maple syrup, brown sugar vanilla extract and cinnamon together in one large bowl. Set aside.
  • Meanwhile mix brown sugar and cinnamon together in a bowl, and mix melted butter, powdered sugar, milk and vanilla together in a separate bowl.
  • Divide oat mixture among 4 jars evenly, then divide brown sugar/cinnamon mixture overtop of each jar.
  • Finish by drizzling frosting with a spoon in a swirl pattern over each jar. Let sit at least 2 hours until enjoying. Jars will last 5 days in the fridge.

Notes

Rolled oats are best for overnight oats.
Use a plant-based yogurt and milk to make these vegan.
Store overnight oats in mason jars or overnight oats containers in the fridge for up to 4 days. Perfect for meal prep!
You can freeze the base for up to 3 months then defrost overnight in the fridge, but I don't recommend it as the texture will change.
