Cinnamon Roll Overnight Oats

- 1 1/3 cups rolled oats
- 2 cups milk dairy or non-dairy
- 2 cups plain Greek yogurt
- 1/4 cup ground flax
- 2 tbsp maple syrup
- 2 tbsp brown sugar
- 1 tbsp vanilla extract
- 2 tsp cinnamon
Topping
- 2 tsp brown sugar
- 1 tsp cinnamon
Frosting
- 1 tbsp butter softened
- 1/3 cup powdered sugar
- 1 tsp milk
- 1/4 tsp vanilla
Mix together rolled oats, milk, Greek yogurt, ground flax, maple syrup, brown sugar vanilla extract and cinnamon together in one large bowl. Set aside.
Meanwhile mix brown sugar and cinnamon together in a bowl, and mix melted butter, powdered sugar, milk and vanilla together in a separate bowl.
Divide oat mixture among 4 jars evenly, then divide brown sugar/cinnamon mixture overtop of each jar.
Finish by drizzling frosting with a spoon in a swirl pattern over each jar. Let sit at least 2 hours until enjoying. Jars will last 5 days in the fridge.
Rolled oats are best for overnight oats.
Use a plant-based yogurt and milk to make these vegan.
Store overnight oats in mason jars or overnight oats containers in the fridge for up to 4 days. Perfect for meal prep!
You can freeze the base for up to 3 months then defrost overnight in the fridge, but I don't recommend it as the texture will change.
