Chicken Caesar Pasta Salad

This Chicken Caesar Salad Pasta is perfect for potlucks or meal prep! It has a creamy homemade dressing, parmesan and crunchy croutons.

Ingredients

  • 1 tsp olive oil
  • 1 lb chicken breasts sliced in half to make cutlets
  • 1 tbsp cajun seasoning
  • 1 head romaine lettuce chopped
  • 1 cup rotini pasta dry
  • 1/2 cup croutons crumbled
  • 1/4 cup parmesan cheese grated or shaved

Easy dressing

  • 1/2 cup light mayo
  • 1/2 cup sour cream
  • 1/4 cup parmesan cheese grated
  • 1 tbsp lemon juice
  • 1 tbsp worcestershire sauce
  • 2 cloves garlic minced
  • 1 tbsp capers finely minced
  • Salt & pepper to taste

Instructions

  • Heat a large pot of salted water over high heat. When boiling, cook pasta for 9 minutes until al dente. Drain pasta and let cool at least 20 minutes.
  • Meanwhile, cut chicken to make cutlets and rub with cajun seasoning and season with salt and pepper. Heat a large skillet over medium-high heat and add a bit of olive oil. Add chicken and cook for 5 minutes per side. Let cool at least 5 minutes before dicing into pieces.
  • Mix dressing ingredients together and clean and slice up lettuce.
  • Add pasta, lettuce, chicken and croutons to a bowl. Toss with dressing, then garnish with fresh parmesan. Serve and enjoy!

Notes

If you're short on time, use rotisserie or leftover chicken.
Swap the pasta for quinoa or chickpea pasta to make it gluten-free.
Feel free to add crunchy veggies like peas or roasted bell peppers, or a sprinkle of crispy bacon for extra texture.
Prep ahead by tossing chicken and dressing with the pasta, then stir in greens just before serving to keep everything fresh.
