- 2 tsp olive oil
- 8 boneless, skinless chicken thighs
Spice blend
- 1/4 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp thyme
- 1/4 tsp salt
- 1/4 tsp pepper
Optional rice side dish
- 1 cup white rice
- 1 1/2 cups water
- 1 tsp butter
Optional green beans side dish
- 1 tsp olive oil
- 4 cups green beans ends trimmed
- 2 cloves garlic minced
Preheat oven to 425 F, then line a baking sheet with parchment paper. Mix spice blend together in a small bowl and set aside.
Add thighs to the baking sheet, then brush with olive oil and rub spice blend overtop. Bake for 20 minutes. If adding green beans as a side dish, add them to the baking sheet along with the chicken thighs 5 minutes into cooking time so thighs bake for 20 minutes, and beans cook for 15 minutes.
Meanwhile, if serving, cook the rice, water and butter in a rice cooker or pot on the stove while chicken cooks.
Serve the chicken with optional sides if desired, and enjoy!

Let the chicken rest for 5-10 mins before serving.
Use a meat thermometer to check that its done. It should have an internal temperature of 165F.
Store the leftovers in the fridge for 4-5 days. Sprinkle water over top, cover with a damp paper towel, and microwave for 1-2 mins.
