Kale Caesar Salad with Avocado Dressing

- One head of kale
- 1/2 red onion finely diced
- 1/2 red pepper chopped
- 1/4 cup hemp hearts
- 1/2 cup chopped turkey/pork bacon bits fried then finely chopped/crumbled
- 1/3 cup of your fave croutons we crush up Ace Bakery's Rosemary & Sea Salt Artisan Crisps
Dressing
- 3/4 cup of your fave Caesar Salad Dressing we use Renee's
- 1 avocado mashed
- 1 tbsp lemon juice
- 1/2 tsp freshly ground black pepper
- 1 tsp salt
- 1/4 cup freshly grated parmesan cheese
Bonus-Roasted Chickpea Recipe
- 1 can chickpeas
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp lemon juice
- 1/2 tsp garlic powder optional
Wash and dry kale before de-stemming and chopping. Place into large bowl with red pepper, onion, croutons, and hemp hearts.
Meanwhile, cook the bacon of your choice. We usually go with turkey bacon to keep the recipe low calorie but you can always treat yourself and go with real bacon!
While bacon is cooking, mix together dressing ingredients and toss salad to coat.
Serve with bacon and a sprinkle of parmesan cheese if desired and enjoy!
