Kale Caesar Salad with Avocado Dressing

Ingredients

  • One head of kale
  • 1/2 red onion finely diced
  • 1/2 red pepper chopped
  • 1/4 cup hemp hearts
  • 1/2 cup chopped turkey/pork bacon bits fried then finely chopped/crumbled
  • 1/3 cup of your fave croutons we crush up Ace Bakery's Rosemary & Sea Salt Artisan Crisps

Dressing

  • 3/4 cup of your fave Caesar Salad Dressing we use Renee's
  • 1 avocado mashed
  • 1 tbsp lemon juice
  • 1/2 tsp freshly ground black pepper
  • 1 tsp salt
  • 1/4 cup freshly grated parmesan cheese

Bonus-Roasted Chickpea Recipe

  • 1 can chickpeas
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder optional

Instructions

  • Wash and dry kale before de-stemming and chopping. Place into large bowl with red pepper, onion, croutons, and hemp hearts.
  • Meanwhile, cook the bacon of your choice. We usually go with turkey bacon to keep the recipe low calorie but you can always treat yourself and go with real bacon!
  • While bacon is cooking, mix together dressing ingredients and toss salad to coat.
  • Serve with bacon and a sprinkle of parmesan cheese if desired and enjoy!
