DIY Loaded Potato Skins Bar

Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup grated cheddar cheese

  • Tomatoes
  • Jalapeños
  • Corn
  • Bacon
  • Sour cream
  • Guacamole
  • Salsa
  • Green onions
  • Roasted peppers

Instructions

  • Preheat oven to 450 F. Wash potatoes and poke each all over with a fork. Wrap in tin foil and place in oven to cook for about 45 minutes once oven has been preheated.
  • Remove potatoes from oven, and let cool for 15-20 minutes. Slice each in half with a large knife, then scoop out most of the flesh inside each potato. You can set aside to use later for mashed potatoes or to create twice baked potatoes.
  • Cover potatoes in 1/2 tbsp of olive oil each, then put back in the oven for 5 minutes. Cover each with cheese and cook for another 5 minutes until cheese i melted.
  • Lay toppings out family style and top potato skins with toppings of your choice!
