Homemade Alphabet Vegetable Soup

Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 3 carrots, diced
  • 1 medium-sized Russet potato
  • 1 cup green beans, chopped
  • 1 cup Corn
  • 1 can kidney beans
  • 1/2 cup dried green lentils, rinsed
  • 1 cup dried alphabet pasta
  • 5 cups vegetable broth
  • 2 14oz cans Mutti finely chopped tomatoes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • 2 bay leaves

Instructions

  • Chop and prepare carrots, potatoes and green beans. Rinse potatoes well under running water to remove excess starch.
  • In a large, deep pot, heat olive oil over med-high heat. Add garlic and saute for 30 seconds, then add carrots, potatoes and green beans. Saute for 2 min, stirring often.
  • Add the rest of the ingredients and bring to a boil. Simmer on medium-low heat for 20 minutes, stirring often, until pasta and lentils are cooked through. Remove bay leaves.
  • Serve immediately or freeze - this makes a thick soup so add a bit of water and some salt every time you go to reheat it. Enjoy!
