Easy Summer Roll Bowls
These Easy Summer Roll Bowls are inspired by Vietnamese rice paper rolls and filled with fresh herbs like mint, basil & cilantro!

Servings: 4 bowls
- 1 package rice noodles
- 16 Pre-cooked shrimp
- 1 cup Julienned cucumbers and bell peppers
- 1 watermelon radish, sliced (optional)
- 1 cup each chopped fresh cilantro, basil & mint
- 1/4 cup chopped peanuts
Easy soy vinaigrette
- 1 tbsp olive oil
- 1/4 cup soy sauce
- 1 tsp lime juice
- 1 tbsp apple cider vinegar
- 1/2 tsp hot sauce
- 2 tsp honey
Cook noodles according to package directions. Defrost shrimp if necessary in the meantime.
Make the soy vinaigrette by whisking all ingredients together. Chop and prepare veggies.
In a large bowl, toss all ingredients together with vinaigrette. Enjoy!
