Easy Summer Roll Bowls

These Easy Summer Roll Bowls are inspired by Vietnamese rice paper rolls and filled with fresh herbs like mint, basil & cilantro!

Ingredients

  • 1 package rice noodles
  • 16 Pre-cooked shrimp
  • 1 cup Julienned cucumbers and bell peppers
  • 1 watermelon radish, sliced (optional)
  • 1 cup each chopped fresh cilantro, basil & mint
  • 1/4 cup chopped peanuts

Easy soy vinaigrette

  • 1 tbsp olive oil
  • 1/4 cup soy sauce
  • 1 tsp lime juice
  • 1 tbsp apple cider vinegar
  • 1/2 tsp hot sauce
  • 2 tsp honey

Instructions

  • Cook noodles according to package directions. Defrost shrimp if necessary in the meantime.
  • Make the soy vinaigrette by whisking all ingredients together. Chop and prepare veggies.
  • In a large bowl, toss all ingredients together with vinaigrette. Enjoy!
