Preheat oven to 450 F. On a parchment lined baking sheet, spread out baby potatoes. Toss in olive oil, then bake for 25 min until potatoes are softened.
Remove from oven and let cool at least 10 min before scooping out pulp from each potato.
Dump into a large bowl and toss potato pulp with Artichoke and Asiago dip, turkey bacon and green onions. Bake another 15 min, then top with cheddar cheese. Bake for 3-4 min or until cheese is just melted. Serve and enjoy!
