Artichoke & Asiago Loaded Baby Potatoes

Ingredients

  • 2 tsp olive oil
  • 1 package baby potatoes
  • 1 package Artichoke and Asiago Summer Fresh Dip
  • 1 tbsp butter
  • 8 slices turkey bacon diced
  • 8 green onions sliced
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 450 F. On a parchment lined baking sheet, spread out baby potatoes. Toss in olive oil, then bake for 25 min until potatoes are softened.
  • Remove from oven and let cool at least 10 min before scooping out pulp from each potato.
  • Dump into a large bowl and toss potato pulp with Artichoke and Asiago dip, turkey bacon and green onions. Bake another 15 min, then top with cheddar cheese. Bake for 3-4 min or until cheese is just melted. Serve and enjoy!
