LIGHT SUMMER LUNCH RECIPE

These Vegan Summer Rolls are a light and fresh no-cook lunch idea—they're filled with lots of flavourful herbs and veggies!

Ingredients

Step 1 Place the  tofu between two kitchen towels and use a heavy object to squeeze out the moisture.

Step 2 Cut the tofu into strips and marinate in water, soy sauce, apple cider vinegar and sesame oil.

Step 3 While the tofu is marinating, prep the veggies.

Step 4 Dip the rice paper wrappers in warm water to soften them.

Step 5 Add a small amount of each topping to the rice paper wrapper and wrap the rolls.

Step 6 Dip the rolls in sweet chili sauce, serve and enjoy!

Prepping the rolls Prep the veggies and marinate the tofu ahead of time, then make the rolls within two hours of when you'll be serving them.
