How do you freeze fresh zucchini?
Freezing zucchini allows you to use it later to make your favorite zucchini recipes. Cut the zucchini into slices and place them into a pot of boiling water (this is called blanching.) After one minute of boiling, remove the zucchini and immediately stop the cooking process. To do this, drain the boiling water and place the zucchini into an ice water bath for one minute. Don't let it sit in the water longer than that or the zucchini will become soggy.
Pat the zucchini dry with paper toweling, then place the slices into a single layer on a baking sheet lined with parchment paper. Place the pan into the freezer and once the slices are frozen, transfer them to an airtight container or plastic freezer bag. The frozen zucchini will keep well for 3 to 4 months.
