- 1 tbsp olive oil
- 1 lb chicken breasts
- 1 yellow onion, diced
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp each salt & pepper
- 1 cup corn
- 1 red pepper, diced
- 1 green pepper, diced
- 1 (496mL) jar salsa
- 4 cups chicken broth
Topping Ideas
- Tortilla strips
- Cilantro
- Lime wedges
- Avocado
- Jalapenos
- Sour cream
- Cheddar cheese
Add all ingredients, besides toppings, to slow cooker in the order in which they are listed. Cook on high for 4 hours, or on low for 8 hours.
Remove chicken breasts, shred, and add back to pot.
Serve in large bowls and add toppings of choice.
