- 2 tbsp butter
- 1 yellow onion diced
- 2 stalks celery diced
- 2 cloves garlic minced
- 4 cups peas
- 3 cups vegetable broth
- 1/2 cup parsley chopped
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- salt & pepper to taste

- Extra peas
- Microgreens
- Creme fraiche, sour cream or Greek yogurt
In a large pot, melt butter over med-high heat. Saute onions, celery and garlic for 4-5 minutes until tender.
Add in peas and chicken broth, bringing to a boil. Cover with a lid and simmer for 20 minutes.
Remove lid, then stir in parsley, heavy cream and lemon juice. Blend with an immersion blender or wait until soup has cooled slightly and blend in a blender.
Serve with bread and desired toppings and enjoy!
Use fresh or frozen green peas for this soup.
Add on additional toppings like extra peas, microgreens or crème fraiche.
Store the leftovers in the fridge for up to 5 days. Reheat in a pot on the stovetop or microwave for 1-2 minutes.
Freeze this recipe for up to 3 months without the cream. Defrost in the fridge then reheat as normal and stir in the cream.
