Ingredients

  • 4 russet potatoes about 4 inches in length and 3 inches in diameter
  • Cooking spray
  • Salt & pepper to taste
  • Butter to taste
  • 1 cup grated cheddar cheese
  • 4 slices turkey bacon
  • 1/2 cup sour cream
  • 2 green onions sliced

Instructions

  • Add russet potatoes to the air fryer basket, spraying with cooking spray and seasoning with salt. Air fry for 30 minutes at 400 F. With an oven mitt, flip potatoes over and then air fry for another 15 minutes until potatoes are tender.
  • Meanwhile, fry bacon in a skillet over medium-high heat for 5-10 minutes until cooked through. Chop bacon up once cooled. Grate cheese and slice green onions, then set aside.
  • Remove potatoes from the air fryer, then slice down the center. Add butter and salt and pepper to taste, then add cheese, chopped up bacon and sliced green onions. Serve with sour cream and enjoy!

Notes

Try out different toppings like salsa, chili, refried beans and more.
Store the leftovers in the fridge for up to 5 days. Reheat in the air fryer or in the oven at 350 F.
Freeze your baked potatoes for up to 3 months. Make sure to flash freeze them first so they don’t stick together. Reheat them right from frozen in the air fryer or oven.
