Crockpot Chicken Tortilla Soup

Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken breasts
  • 1 yellow onion, diced
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp each salt & pepper
  • 1 cup corn
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 (496mL) jar salsa
  • 4 cups chicken broth

Topping Ideas

  • Tortilla strips
  • Cilantro
  • Lime wedges
  • Avocado 
  • Jalapenos
  • Sour cream
  • Cheddar cheese

Instructions

  • Add all ingredients, besides toppings, to slow cooker in the order in which they are listed. Cook on high for 4 hours, or on low for 8 hours.
  • Remove chicken breasts, shred, and add back to pot.
  • Serve in large bowls and add toppings of choice.
