Elevated Meatloaf & Blue Potatoes

This meatloaf uses ground chicken and is delicious and moist.

Ingredients

  • 1 lb ground chicken
  • 1/4 cup milk
  • 1 clove garlic minced
  • 1/4 cup panko breadcrumbs
  • 1 1/2 tsp Worcestershire sauce
  • 1 tsp sriracha
  • 2 dashes tabasco
  • 1/4 cup ketchup
  • Half beef bouillon cube
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/4 tsp rosemary
  • 1 large shallot finely chopped
  • 1 celery stalk finely chopped
  • 1/4 cup red pepper minced
  • 2-3 tbsp olive oil

Potatoes

  • 1 package tricolour baby potatoes
  • 1 tbsp olive oil
  • 1/2 tsp rosemary
  • 1/4 tsp thyme
  • 1 tsp sriracha
  • 1 tsp sea salt
  • 1/2 tsp pepper

Asparagus

  • 1/2 lb asparagus
  • 1 tsp balsamic
  • 2 tsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 400 degrees and grease small oven-safe pan with 2-3 tbsp olive oil.
  • Mix all ingredients together for the meatloaf, and press into pan, making sure edges of the pan have remained fully greased. Place in oven and cook for 45 minutes.
  • Meanwhile, cut baby potatoes in half and toss in olive oil and herbs. Place in oven for 40 minutes.
  • While everything else is cooking in the oven prepare the asparagus by cutting about an inch off each stem. Toss in oil olive, balsamic, garlic and season with salt and pepper. Coordinate cooking time with other dishes by placing this dish in the oven to cook with 10-15 min left.
  • Take everything out of the oven at the same time and serve. It's that easy!
