Mexican Corn on the Cob

This Mexican Corn on the Cob is absolutely delicious and perfect for those summer barbecues!

Ingredients

  • 4 cobs of corn
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Cajun seasoning or chili powder recipe below
  • 1/4 cup cilantro finely chopped
  • 1/8 cup goat or feta cheese

Sauce

  • 1/3 cup mayo
  • 1/2 cup sour cream
  • 2 cloves garlic finely chopped
  • 1/2 tsp Cajun spice or chili powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

Cajun Seasoning

  • cup ¼chili powder
  • 1 tbsp cumin
  • cup ⅛paprika
  • 1 tsp salt
  • tsp ½pepper
  • 1 tbsp garlic powder or 1 tsp garlic salt
  • 1 tbsp coriander
  • 1 tsp cayenne pepper

Instructions

  • Remove husks and strings from corn, and slather in enough olive oil to cook on a hot BBQ without sticking. Preheat your BBQ to its highest setting.
  • Put the cobs on the grill, cooking untouched for a cook 5 min or so--you'll want a nice char on the corn for the full effect.
  • Rotate corn to get char marks, cooking for no longer than 10-15 min.
  • Remove from heat and slather corn in mayo-sour cream sauce, garnishing with cilantro and Cajun spice.
  • Cut into 3 pieces and enjoy!
