Mexican Corn on the Cob

- 4 cobs of corn
- 1 tbsp olive oil
- Salt & pepper to taste
- Cajun seasoning or chili powder recipe below
- 1/4 cup cilantro finely chopped
- 1/8 cup goat or feta cheese
Sauce
- 1/3 cup mayo
- 1/2 cup sour cream
- 2 cloves garlic finely chopped
- 1/2 tsp Cajun spice or chili powder
- 1/2 tsp salt
- 1/4 tsp pepper
Cajun Seasoning
- cup ¼chili powder
- 1 tbsp cumin
- cup ⅛paprika
- 1 tsp salt
- tsp ½pepper
- 1 tbsp garlic powder or 1 tsp garlic salt
- 1 tbsp coriander
- 1 tsp cayenne pepper
Remove husks and strings from corn, and slather in enough olive oil to cook on a hot BBQ without sticking. Preheat your BBQ to its highest setting.
Put the cobs on the grill, cooking untouched for a cook 5 min or so--you'll want a nice char on the corn for the full effect.
Rotate corn to get char marks, cooking for no longer than 10-15 min.
Remove from heat and slather corn in mayo-sour cream sauce, garnishing with cilantro and Cajun spice.
Cut into 3 pieces and enjoy!
