Loaded Potato Salad & Chipotle Ranch Dressing

This Loaded Potato Salad recipe uses Chipotle Ranch Dressing for an ultra creamy, yet deliciously spicy kick to the traditional potato salad recipe.

Ingredients

  • 8 small-medium sized red-skinned potatoes
  • 1 tsp salt
  • 4 green onions sliced
  • 6 slices turkey bacon
  • 1/3 cup shredded marble or cheddar cheese

Chipotle-Ranch Dressing

  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1/2 in chipotleadobo sauce finely minced
  • 1 clove garlic minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried dill

Instructions

  • Cut potatoes (depending on size) in quarters (cut in half, then cut halves in half). Fill large pot with cold water, and dump potatoes in. Season water with about 1 tsp salt. Turn heat to high until water starts to boil, and then reduce to medium heat. Cook potatoes for about 12-15 min until potatoes are just fork tender all the way through.
  • Meanwhile, cook turkey bacon in pan over med-high heat for about 4-5 min. Slice green onions. Shred cheddar cheese. Mix dressing ingredients together and set everything aside.
  • When potatoes are ready, drain and let sit for about 30 min until potatoes are cooled. Toss with all other ingredients and dressing.
  • Serve immediately, or for a deeper flavour let sit in fridge for at least 1-2 hours.
