Prickly Pear and Ginger Beer Cocktail
These Prickly Pear and Ginger Beer Cocktails are a refreshingly different take on a summer drink using fresh prickly pear puree, ginger beer and lime.

Servings: 4 cocktails
- 1 prickly pear
- 3 bottles ginger beer you can substitute ginger beer for ginger ale
- 2 limes
- 2 tsp simple syrup
- Edible flowers prickly pear or lime for garnish
Slice and de-skin prickly pear, then place in blender or Magic Bullet and puree until smooth.
Strain prickly pear using a fine mesh sieve or strainer, twice. Result should be a smooth, syrupy liquid.
Pour about 4 tbsp of the prickly pear syrup into a pitcher, then add bottles of ginger beer.
Squeeze limes to get fresh juice and add to pitcher.
To make simple syrup: combine equal parts boiling water and sugar. Add to pitcher.
Mix all ingredients together then pour each cocktail over ice and decorate with garnish of your choice.
