Pine-Infused Vodka Sour Cocktail

Pine syrup
- 4 sprigs of pine washed gently with soap & water, and rinsed well
- 1 cup boiling water
- 1/2 cup sugar

- 4 sprigs of pine washed gently with soap & water, and rinsed well
- 6 oz vodka 1.5per glass
- 6 oz freshly squeezed lemon juice
- 4 oz freshly squeezed lime juice
- 1/2 cup pine syrup
- 2 cups ginger ale
- ice
To make pine-infused syrup, mix boiling water, sugar and pine. Let sit for about 15-20 minutes until pine has the chance to flavour the mixture. There should be a clear aroma and taste to the syrup.
Meanwhile, infuse 6 oz vodka with fresh pine sprigs for the same amount of time (15-20 min).
Once vodka and syrup are ready, remove sprigs from the vodka and place each inside four highball glasses filled with ice.
In a shaker, mix vodka, lemon and lime juice, pine syrup and ice all together, adding egg whites if you prefer a more traditional whiskey sour taste. You can also use whiskey in this cocktail instead of vodka. Divide and strain between the four glasses, then top each glass with ginger ale.
Serve immediately and enjoy!
